Potato and Banana chips are common processed food items leading to substantial value-addition. Chips are crispy, salty or spicy and consumers prefer fresh quality. Chips are the most common form of snacks and that they are consumed around the year by people of all age groups and all income segments. Around 344 lakh metric tons of potatoes are grown in India which is about 15 % of the total world production. It is estimated that 25% of the potatoes, are spoiled due to various reasons such as transportation, type of packing, availability of cold storage etc. This could be prevented by making various preserved potato products and Potato Chips is one of such products which has a great potential in today’s environment.

The popularity of snack food is growing high day by day and Potato/Banana chips have emerged as a potential snack food since past many years. There exists a very large market for chips & they can be sold at various retail outlets, Pan Shops, Bus stands, Railway stations, roadside eateries, etc. There also exists institutional market consisting of clubs and other institutions, schools & colleges, army, railway & airline caterers etc.

India’s potato chips/crisps market was worth US$2.59bn in 2017, growing at an annual rate of 18.7%, and is expected to further expand to a value of $5.5bn in 2022. Ten years after the launch of Haldiram’s  Chips brand, the company holds a 14% share of the market for nationally branded potato chips, tussling with Balaji Wafers (at 15%) and ITC (on 16%), with all three some way behind PepsiCo, which accounts for 40% of sales
